Salad is a great way to make a healthy and tasty meal for summer. It will be perfect both as a lunch for work and as a side dish for dinner. What salads are best for hot days?

Salad with strawberries and halloumi cheese

The ingredients needed to make this salad are:

  • 300 g strawberries,
  • 220 g halloumi cheese,
  • 2 handfuls of fresh spinach,
  • 5 tablespoons of flaked almonds,
  • a 2 cm piece of ginger root,
  • 2 tbsp extra-virgin olive oil,
  • 1 tsp lemon juice,
  • 1 tsp honey.

Rinse and dry strawberries and spinach. Remove the stalks from the fruit and cut them in half. Chop the spinach into pieces and arrange in a bowl. Put sliced strawberries on it. Slice the halloumi cheese and grill it over medium heat for 2 minutes on a preheated grill pan coated with olive oil. When the cheese is covered with brown stripes, put it on the other side, grill it and place it on the spinach. In a bowl mix together lemon juice, olive oil, honey and grated ginger. Pour it over the salad. Sprinkle the salad with almond flakes.

Salad with blackberries, melon and feta cheese

To prepare this salad, we will need:

  • 1 cup of blackberries,
  • ⅓ of melon,
  • 80 g of feta cheese,
  • 1 handful of lamb’s lettuce,
  • 1 handful of arugula,
  • 2 tablespoons honey,
  • 2 teaspoons grated ginger,
  • 1 teaspoon lime juice,
  • 1 teaspoon extra-virgin olive oil,
  • salt,
  • pepper.

In a bowl mix together the ingredients of the sauce: honey, ginger, lime juice, salt and pepper. Peel the melon and cut into cubes. Mix with the sauce. Place arugula and lamb’s lettuce in a bowl, add a pinch of salt and pepper, drizzle with olive oil and mix. Arrange the melon, blackberries and crumbled feta cheese over the salad.

Raccoon salad

To prepare this Bulgarian salad you will need:

  • 150 g Bulgarian cheese,
  • 4 cucumbers,
  • 2 tomatoes,
  • 1 bell pepper,
  • 1 shallot onion,
  • 2 tbsp olive oil,
  • 1 Tbsp. chopped parsley,
  • 1 teaspoon of lemon juice,
  • salt,
  • pepper.

Peel cucumbers, cut lengthwise and then crosswise into pieces. Cut tomatoes and bell bell pepper into cubes and onion into slices. Arrange the vegetables in layers in a bowl – tomatoes first, then cucumber, bell bell pepper and onion. Season with salt and pepper and drizzle with olive oil mixed with lemon juice. Sprinkle the salad with grated Bulgarian cheese and chopped parsley.

Crab and avocado salad

To make this light, refreshing salad, stock up on the following ingredients:

  • 1 can of crab,
  • 2 handfuls of lettuce leaves,
  • 1 grapefruit,
  • 1 avocado,
  • 0.5 pomegranate,
  • 4 tablespoons flaxseed oil,
  • 2 teaspoons cumin
  • 2 Tbsp. honey,
  • 1 teaspoon mustard,
  • salt.

Arrange lettuce in a bowl and sprinkle with salt. Peel the grapefruit, separate into pieces and take out the pulp. Put it on the lettuce. Peel and dice the avocado and add it to the rest of the ingredients. Drain the crab and add it to the salad. Sprinkle the ingredients with pomegranate seeds and cumin. Pour a vinaigrette dressing previously prepared from honey, mustard and oil over the salad

Salad with grapes and goat cheese

To make this healthy salad you will need:

  • 40 g of goat cheese,
  • 12 red grapes
  • 2 handfuls of rocket salad,
  • 2 handfuls of lamb’s lettuce,
  • 4 tbsp balsamic vinegar,
  • 3 tbsp olive oil,
  • 2 Tbsp honey,
  • 2 Tbsp sunflower seeds,
  • 2 teaspoons of lemon juice,
  • 1 pinch of cinnamon
  • salt,
  • pepper.

Rinse arugula and lamb’s lettuce, dry and season with olive oil, lemon juice, salt and pepper. Mix and put into a bowl. Arrange the halved grapes and crumbled goat’s cheese on the lettuce. Sprinkle with sunflower seeds previously roasted on a dry frying pan. The salad is topped with a vinaigrette made from balsamic vinegar, olive oil, honey, cinnamon, salt and pepper.

Each of the above mentioned salads can be served solo or with croutons. They can be prepared, for example, with toasted baguette or bread spread with garlic butter and baked in the oven.
